🍋🫐 Lemon Blueberry Protein Donut Holes 🌟Ingredients: • ¾ cup cottage cheese blended smooth • 1 cup almond flour (add 1–2 tbsp more if batter is too wet) • 1 egg • 1 tbsp maple syrup • zest from 1 lemon • 2 tsp baking powder • ¼ tsp baking soda • ¼ tsp salt • ½ cup frozen wild blueberries 🌟Icing: • ½ cup Swerve confectioners sugar • ¼ tsp vanilla • 1–2 tbsp A2 grass fed milk 🌟Directions: - In a bowl, whisk almond flour, lemon zest, baking powder, baking soda, and salt - Add blended cottage cheese, egg, and maple syrup and mix until a dough forms then gently fold in blueberries - Scoop ~2 tbsp dough and roll into balls Air fry at 350°F for 6–8 minutes until golden then let cool completely. I don’t think I’ll ever get over my cottage cheese donut hole recipe…they’re too good 🤤 these *dark chocolate chip cottage cheese donut holes* are fluffy and soft, rich in chocolate flavor, and embedded with mini chocolate chips. AND pack 5g protein per donut hole (makes 10 total) FULL RECIPE 👇🏼 printable recipe at the link in my bio. Ingredients Donut Holes * ¾ cup + 2 tbsp 4% Good Culture cottage cheese * 1 cup all-purpose flour * 2 tbsp dutch-processed cocoa powder * 2 tsp baking powder * ¼ tsp baking soda * ¼ tsp salt * 2 tbsp maple syrup * 1 large egg * ⅓ cup mini chocolate chips Icing * ½ cup powdered sugar * 1-2 tbsp milk * ¼ tsp vanilla extract Instructions * Add cottage cheese to a food processor and process until just blended. The texture should be smooth with several small chunks remaining, similar to the texture of greek yogurt. 
* In a large mixing bowl, whisk together the flour, cocoa powder, baking powder, and salt. Add the blended cottage cheese, maple syrup, and egg. Stir well with a spoon. Once it starts to come together, fold in chocolate chips. 
* Take ~1 ½ tbsp dough at a time and carefully roll into balls. Flour hands, if needed. 
* Preheat air fryer. Coat basket with non-stick cooking spray. Place balls in air fryer, trying not to overcrowd the basket. Spray with non-stick cooking spray. Air fry for 6-8 minutes at 350°F. 
* Remove from air fryer and cool. While donuts are cooling, whisk together the ingredients for the icing. 
* One donuts are completely cooled, dip them in the glaze and let set for 10-15 minutes. Enjoy!

Cottage Cheese Cinnamon Rolls!! Ingredients For the dough: 1 1/2 cups all-purpose flour plus a few tablespoons as needed 2 teaspoon baking powder 1 1/2 cups cottage cheese 2 tablespoons maple syrup 1 teaspoon vanilla extract For the filling: 1/3 cup dark brown sugar 3 tablespoons butter melted 1 1/2 teaspoons ground cinnamon For the glaze: 1/4 cup powdered sugar more if you like more glaze 1 tablespoon milk Instructions Preheat the oven to 375°F and prepare a small baking dish by lightly spraying with oil or lining with parchment paper (recommended). I recommend using a square 8x8" pan or a circular 8-9" cake pan. In a large mixing bowl, whisk together the flour and baking powder. Add the cottage cheese, maple syrup, and vanilla. Use a wooden spoon to stir together. Use clean, floured hands to form the mixture into a dough ball. Add extra flour, a tablespoon or two at a time, if the dough is too sticky to handle. Transfer the dough ball to a floured surface and roll into roughly a 10x12" rectangle. Note: Make sure your surface and rolling pin are well floured because the dough is slightly sticky. In a small bowl, mix together the dark brown sugar, butter, and cinnamon. Add the filling in an even layer to the rolled out dough. Roll tightly from the long edge into a log carefully. Note: the dough will be sticky, so it can be helpful to keep a butter knife or bench scraper handy to lift up the dough as you roll, if it sticks. Slice the log into 6 large cinnamon rolls. Place the rolls in your dish, evenly spaced apart. Bake for 25 to 30 minutes, until the rolls are golden brown. Allow to cool for at least 10 minutes. While the rolls are baking, mix together the ingredients for the glaze in a small bowl. Top the cinnamon rolls with the glaze and serve.
