BREAKFAST

Banana-Berry Oat Pancakes

Soft, naturally sweet banana-oat pancakes with juicy berries.

Ingredients — Serves 4

2 cups oat flour
½ cup old-fashioned oats
3 tsp baking powder
½ tsp salt
2 ripe bananas
1½ cups milk or appropriate alternative, plus more as needed
½ tsp vanilla
3 tbsp melted butter or neutral/olive oil
1 cup blueberries or sliced strawberries
Maple syrup, optional

Directions

  1. Combine oat flour, oats, baking powder and salt.
  2. Mash bananas until mostly smooth.
  3. Stir milk, vanilla and melted butter/oil into the bananas.
  4. Fold wet ingredients into dry ingredients. Add a splash more milk if the batter is too thick.
  5. Heat a lightly greased skillet over medium heat.
  6. Spoon approximately ¼ cup batter per pancake onto the skillet and add a few berries.
  7. Cook until the edges look set and bubbles appear, then flip.
  8. Cook the second side until golden.
  9. Serve immediately or cool extras completely and freeze.

This recipe is closely based on Marie’s Kitchen’s published banana-oat pancake preparation, which is egg-free and explicitly provides gluten- and dairy-free options.

Build-Your-Own Chicken Taco Rice Bowls

LUNCH

Build-Your-Own Chicken Taco Rice Bowls

A customizable lunch where everyone starts with the same ingredients and builds the bowl that works for them.

Ingredients

1½ lb boneless chicken
2 cups cooked rice
1 can black beans, rinsed
1½ cups corn
1 avocado, diced
1 cup chopped tomatoes or pico de gallo
Shredded lettuce
1 tbsp olive oil
1 tsp cumin
1 tsp smoked paprika
½ tsp garlic powder
Salt and pepper
Lime wedges
Optional appropriate cheese/sour cream alternative

Directions

  1. Season chicken with cumin, paprika, garlic powder, salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Cook chicken until browned and fully cooked; rest and slice.
  4. Warm rice, beans and corn separately.
  5. Set all ingredients out individually.
  6. Let each family member build their own bowl.
  7. Save extra chicken and rice for later in the week.

DINNER

One-Pan Garlic Herb Chicken, Potatoes & Broccoli

This should be one of the plan’s hero recipes.

Ingredients

2 lb chicken thighs or breasts
1½ lb baby potatoes, halved
4 cups broccoli florets
3 tbsp olive oil
4 garlic cloves, minced
1 tsp dried oregano
1 tsp dried thyme
½ tsp paprika
1 lemon
Salt and pepper

Directions

  1. Heat oven to 400°F.
  2. Toss potatoes with olive oil, garlic, salt, pepper and herbs.
  3. Season chicken with the same mixture.
  4. Arrange chicken and potatoes on a sheet pan.
  5. Roast about 20 minutes.
  6. Toss broccoli with a little olive oil and add it to the pan.
  7. Continue roasting until vegetables are tender and chicken reaches a safe internal temperature.
  8. Finish with fresh lemon.
  9. Set aside extra chicken for Day 3 soup and Day 5 lunch.

Allergy swaps

This recipe is intentionally designed so none of the nine major allergens are required in the base recipe.

Check dried seasoning blends if using them rather than individual spices.

For a visual cooking reference, Wyse Guide has a sheet-pan chicken, potato and broccoli video, although their finished version includes Parmesan and optional honey-Dijon vinaigrette. Our version intentionally omits those ingredients.

DAY 2

Apple Cinnamon Overnight Oats

Ingredients

2 cups rolled oats
2 cups milk or appropriate alternative
1 cup unsweetened applesauce
1 apple, diced
2 tbsp chia seeds, optional
1 tsp cinnamon
1 tsp vanilla
Maple syrup or honey to taste, optional

Directions

  1. Divide oats between containers.
  2. Add milk, applesauce, cinnamon and vanilla.
  3. Add chia if appropriate for the family.
  4. Stir thoroughly.
  5. Cover and refrigerate overnight.
  6. Top with diced apple before serving.

12 oz sliced turkey
2 avocados
2 cucumbers
2 bell peppers
2 cups berries or grapes, age-appropriately prepared
Crackers appropriate for your family’s needs
Optional tolerated cheese

Directions

  1. Divide turkey among four containers.
  2. Slice cucumber and peppers.
  3. Add fruit.
  4. Slice avocado just before serving when possible.
  5. Add crackers in a separate compartment to keep them crisp.
  6. Add cheese only if appropriate.

DINNER

Hidden-Veggie Beef & Tomato Pasta

Ingredients

1 lb lean ground beef
12 oz pasta
1 zucchini, grated
2 carrots, grated
1 small onion, finely diced
2 garlic cloves
24 oz crushed tomatoes
1 tbsp olive oil
1 tsp Italian seasoning
Salt and pepper

Directions

  1. Cook pasta according to package directions.
  2. Heat oil and soften onion.
  3. Add beef and cook until browned.
  4. Add garlic, carrots and zucchini.
  5. Cook until vegetables soften.
  6. Add tomatoes and Italian seasoning.
  7. Simmer 15–20 minutes.
  8. For children who prefer a smoother sauce, blend the vegetable-tomato mixture before combining with the beef.
  9. Toss with pasta.

Ingredients

1 lb ground turkey
1½ lb potatoes, diced
1 bell pepper
½ onion
2 cups spinach
2 tbsp olive oil
1 tsp paprika
½ tsp garlic powder
Salt and pepper

Directions

  1. Heat 1 tbsp oil in a large skillet.
  2. Add potatoes and season.
  3. Cook until golden and fork-tender.
  4. Remove potatoes temporarily.
  5. Add remaining oil and turkey.
  6. Cook thoroughly, breaking turkey into crumbles.
  7. Add onion and pepper and cook until tender.
  8. Add potatoes back.
  9. Fold in spinach until wilted.
  10. Serve as-is—no eggs required.

Cozy Chicken & Vegetable Rice Soup

Ingredients

2 cups leftover cooked chicken
¾ cup uncooked rice
2 carrots
2 celery stalks
½ onion
6 cups appropriate chicken broth
1 tbsp olive oil
1 tsp thyme
1 tbsp lemon juice
Salt and pepper
Parsley

Directions

  1. Heat olive oil in a pot.
  2. Add onion, carrots and celery and sauté until beginning to soften.
  3. Add broth, thyme and rice.
  4. Bring to a boil.
  5. Reduce to a simmer and cook until rice is tender.
  6. Add leftover shredded chicken.
  7. Simmer until chicken is heated through.
  8. Finish with lemon, parsley, salt and pepper.

Build-Your-Own Loaded Baked Potato Bar

Ingredients

4 large russet potatoes
1 tbsp olive oil
Leftover shredded chicken
1 can black beans
Steamed broccoli
Corn
Diced tomatoes
Avocado
Green onions
Salsa
Optional tolerated cheese/sour cream

Directions

  1. Heat oven to 425°F.
  2. Scrub and dry potatoes.
  3. Pierce several times with a fork.
  4. Lightly coat with oil and salt.
  5. Bake until crisp outside and tender inside, approximately 45–60 minutes depending on size.
  6. Warm chicken, beans, broccoli and corn.
  7. Put every topping into its own bowl.
  8. Split and fluff potatoes.
  9. Let everyone build their own.

4 cups water, tolerated milk or a combination
2 ripe bananas
1½ cups blueberries
1 tsp cinnamon
1 tsp vanilla
Pinch of salt

Directions

  1. Bring liquid to a gentle simmer.
  2. Stir in oats and sliced banana.
  3. Reduce heat.
  4. Cook 5–7 minutes, stirring periodically and mashing banana into the oats.
  5. Stir in blueberries near the end.
  6. Add cinnamon, vanilla and salt.
  7. Adjust consistency with additional liquid.

Hidden-Veggie Turkey Meatballs & Pasta

1½ lb ground turkey
1 small zucchini, finely grated and squeezed dry
1 small carrot, finely grated
2 garlic cloves
¼ cup finely diced onion
½ cup appropriate GF breadcrumbs or certified GF quick oats
2 tbsp olive oil
1 tsp Italian seasoning
Salt and pepper
12 oz GF/egg-free pasta as needed
24 oz appropriate tomato sauce

Directions

  1. Heat oven to 375°F.
  2. Grate vegetables and remove excess moisture.
  3. Combine turkey, vegetables, garlic, onion, breadcrumbs/oats, seasoning, salt and pepper.
  4. Mix gently.
  5. Roll into evenly sized meatballs.
  6. Arrange on a lined baking sheet.
  7. Bake until completely cooked through.
  8. Meanwhile, prepare pasta.
  9. Warm tomato sauce.
  10. Serve meatballs over pasta and sauce.

Directions

  1. Heat oven according to crust directions.
  2. Put sauce and every topping in a separate container.
  3. Give each person their own crust.
  4. Spread with sauce.
  5. Add tolerated cheese if desired.
  6. Add individual toppings.
  7. Bake according to crust instructions until crisp and hot.
  8. Keep pizzas separate during preparation and baking when cross-contact is a concern.
