Breakfast for lunch makes an easy school-day option with this Breakfast Lunch Box. Creamy oatmeal, a hard-boiled egg, fresh strawberries and banana, and Greek yogurt create a simple mix-and-match meal that can be mostly prepped the night before and packed in minutes.

Directions

  1. Spoon the prepared oatmeal into a leak-resistant section or container. Sprinkle with cinnamon and drizzle lightly with maple syrup.
  2. Cut the hard-boiled egg in half and season lightly with salt or everything bagel seasoning.
  3. Place the egg halves in the lunch box alongside the other foods.
  4. Add the sliced strawberries and banana. Cut the fruit into pieces appropriate for your child’s age and eating abilities.
  5. Spoon the Greek yogurt into a small leak-resistant compartment or container.
  6. Seal the lunch box and refrigerate until ready to pack. Keep chilled with an ice pack until lunchtime.

Lunch Box Tips
