Breakfast for lunch makes an easy school-day option with this Breakfast Lunch Box. Creamy oatmeal, a hard-boiled egg, fresh strawberries and banana, and Greek yogurt create a simple mix-and-match meal that can be mostly prepped the night before and packed in minutes.

Ingredients:
- 1/2 cup prepared oatmeal (cooled)
- 1/4 tsp ground cinnamon
- 1 tsp maple syrup
- 1 egg (hard-boiled, peeled)
- pinch salt (or everything bagel seasoning)
- 1/3 cup strawberries (sliced)
- 1/2 small banana
- 1/3 cup Greek yogurt

Directions
- Spoon the prepared oatmeal into a leak-resistant section or container. Sprinkle with cinnamon and drizzle lightly with maple syrup.
- Cut the hard-boiled egg in half and season lightly with salt or everything bagel seasoning.
- Place the egg halves in the lunch box alongside the other foods.
- Add the sliced strawberries and banana. Cut the fruit into pieces appropriate for your child’s age and eating abilities.
- Spoon the Greek yogurt into a small leak-resistant compartment or container.
- Seal the lunch box and refrigerate until ready to pack. Keep chilled with an ice pack until lunchtime.
Lunch Box Tips
Prep Ahead: Cook the oatmeal and hard-boiled egg ahead of time and refrigerate them so the lunch can be assembled quickly in the morning.
Banana Tip: Slice the banana as close to packing time as possible for the freshest appearance. A little browning by lunchtime is normal and does not mean the banana has spoiled.
Serving the Oatmeal: Pack the oatmeal cold if that works for your child, or follow the school’s setup for safely reheating food if warm lunches are available.
Pack It Safely: Keep the oatmeal, egg, yogurt, and cut fruit refrigerated until it is time to leave and use an ice pack to keep the lunch cold until lunchtime.
