This Taco Lunch Box turns taco-inspired flavors into a fun, easy-to-pack school lunch. Mini taco pinwheels are paired with creamy guacamole, quartered cherry tomatoes, sweet corn, and a mini muffin for a colorful mix of savory, fresh, and sweet foods that kids can enjoy a little at a time.

Directions

  1. Lay the flour tortilla flat and spread the cooked seasoned ground beef evenly over the surface, leaving a small border around the edge.
  2. Sprinkle the shredded cheddar cheese evenly over the beef.
  3. Roll the tortilla tightly into a compact log, then slice it crosswise into several small taco pinwheels.
  4. Arrange the taco pinwheels in the lunch box.
  5. Spoon the guacamole into a small leak-resistant dipping cup or compartment.
  6. Add the quartered cherry tomatoes and cooled sweet corn kernels. They can share a larger compartment rather than being separated.
  7. Add the mini muffin to finish the lunch.
  8. Seal the lunch box and refrigerate until ready to pack. Keep chilled with an ice pack until lunchtime.
