Directions

  1. Lay the flour tortilla flat and spread the peanut butter evenly over the surface, leaving a small border around the edge.
  2. Place the banana near one edge of the tortilla and roll the tortilla snugly around it.
  3. Slice the rolled tortilla crosswise into several bite-sized peanut butter banana rolls. Keep the slices slightly thick so they hold together in the lunch box.
  4. Cut the hard-boiled egg in half and add both halves to the lunch box.
  5. Add the cheese cubes and blackberries or other berries. These can naturally share a larger compartment.
  6. Place the whole-grain crackers in a dry area of the lunch box so they stay crisp.
  7. Seal the lunch box and refrigerate until ready to pack. Keep chilled with an ice pack until lunchtime.

Lunch Box Tips

Prep Ahead: Cook and chill the hard-boiled egg ahead of time, then portion the cheese, berries, and crackers so most of the lunch is ready to pack.

Make the Rolls in the Morning: For the best texture and appearance, assemble and slice the peanut butter banana rolls shortly before packing rather than storing the sliced rolls overnight.

School-Safe Swap: Check your child’s school policy before packing peanut or tree-nut butter. If needed, use sunflower seed butter or another appropriate school-safe alternative.

Keep the Crackers Crisp: Pack the crackers away from moist fruit and other ingredients whenever possible so they stay crunchy until lunchtime.

Pack It Safely: Refrigerate the lunch until it is time to leave and use an ice pack to keep the egg, cheese, fruit, and other perishable foods chilled until lunchtime.

*Assembly time assumes the hard-boiled egg has already been cooked and chilled.
