The Sunday Prep Game Plan
We shouldn’t simply hand you four recipes and tell you to make everything. This is how to get through the prep efficiently.
- Start with the oven. Preheat to 425°F. Get the breakfast potatoes roasting on one sheet pan and the broccoli, peppers and corn going on additional pans. While the oven does the work, move to the stovetop.
- Start both batches of rice. You’ll need rice for the chicken bowls and the BBQ meatball dinners. Cook the batches simultaneously if you have two pots or rice cookers, or make one large neutral batch and season the appropriate portion afterward.
- Prep the chicken. Mix the chili-lime marinade and add the chicken. Let it sit while you continue working.
- Make the meatballs. Mix and shape the turkey meatballs. As soon as one of your sheet pans becomes available, get them into the oven. Make the sticky BBQ glaze while they bake.
- Cook the breakfast components. Brown and season the beef. Scramble the eggs and egg whites until just set. Pull the crispy potatoes from the oven. Spread all three components out so they can cool.
- Cook the chicken. While the meatballs finish, sear or grill the marinated chicken until deeply browned and cooked through. Rest it before slicing.
- Make the two finishing sauces. Blend the roasted jalapeño-lime crema. Mix and finish the BBQ glaze, then coat the meatballs. These little sauces are important—the plan shouldn’t taste like five-day-old chicken-and-rice meal prep.
- Assemble the five burritos. Once the filling is completely cooled, divide it evenly, add cheddar and roll. Wrap individually and label.
- Build 10 meal containers. Make 5 chicken burrito bowls and 5 BBQ turkey meatball bowls. Let everything cool before putting lids on the containers. Don’t leave cooked food sitting at room temperature for more than 2 hours.
- Make the yogurt jars. Mix and portion the honey-vanilla yogurt and berries. Package the granola-almond crunch separately.
- Fridge + freezer split. Rather than refrigerating everything for five days, use a 2–3 day fridge rule for the cooked meal-prep portions. FRIDGE: Monday + Tuesday meals, plus Wednesday if appropriate. FREEZER: Later-week burritos, chicken bowls and turkey meatball bowls. Move the next day’s frozen lunch or dinner into the refrigerator each evening to thaw overnight. Keep all five yogurt bowls refrigerated and keep the crunchy toppings dry and separate.
Breakfast
Loaded Cheesy Beef & Crispy Potato Breakfast Burritos

Makes 5 burritos. Savory seasoned beef, golden roasted russet potatoes, fluffy eggs and egg whites, green chiles and melted cheddar wrapped tightly in a flour tortilla. Freezer-friendly and built to reheat without becoming soggy.
Prep: 15 min | Cook: 30 min | Servings: 5 | Macros per burrito: ~560 cal | ~49g protein | ~45g carbs | ~22g fat
Ingredients:
- 5 large burrito-size flour tortillas
- 1 lb 93% lean ground beef
- 1 lb russet potatoes, diced into small ½-inch cubes
- 5 large eggs
- 1 cup liquid egg whites
- 2½ oz sharp cheddar, shredded
- 1 4-oz can diced green chiles, drained very well
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ¾ tsp ground cumin
- ½ tsp onion powder
- ½ tsp kosher salt, plus more to taste
- Black pepper
- Cooking spray
- ½ cup smoky salsa roja, for serving

Instructions:
- Heat the oven to 425°F. Toss the diced potatoes with cooking spray, smoked paprika, garlic powder, salt and pepper, making sure every cube gets coated. Spread them in a single layer on a sheet pan.
- Roast for 25–30 minutes, tossing halfway through with a spatula, until the potatoes are browned and crisp around the edges. They should be deeply golden, not just tender. Remove and spread out to cool.
- Meanwhile, brown the ground beef in a large skillet over medium-high heat, breaking it into crumbles. Season with cumin, onion powder, a little additional smoked paprika, salt and pepper. Cook until deeply browned rather than just cooked through.
- Stir the drained green chiles into the beef and remove the skillet from the heat. Let the mixture cool slightly while you move on.
- Whisk together the eggs and egg whites with a pinch of salt and pepper until fully combined. Scramble over medium-low heat, stirring gently with a rubber spatula, until just barely set. Don’t overcook them—they’ll cook again when reheated.
- Let everything cool completely before assembling. This is important: hot filling creates steam inside the tortilla, which leads to soggy frozen burritos.
- Divide the beef, potatoes, eggs and cheddar evenly among the five tortillas. Fold in the sides of each tortilla and roll tightly from the bottom up, keeping the filling compact.
- Wrap each burrito tightly in parchment or foil and place in a freezer-safe bag. Label them so you know what they are.
Store + reheat: Freeze up to approximately 3 months. If eating within the first few days, refrigerate a couple and freeze the rest. From frozen, remove foil and wrap the burrito loosely in a damp paper towel. Microwave for about 2 minutes, flip, then continue in 30–60 second increments until hot throughout. For the best texture, finish in an air fryer at 375°F for 3–5 minutes or toast in a dry skillet until golden and crisp. Serve with salsa roja.
🌶 Lunch
Charred Chili-Lime Chicken Burrito Bowls
with Cilantro Rice, Black Beans & Roasted Jalapeño-Lime Crema

Makes 5 bowls. Juicy chili-lime chicken with fluffy cilantro rice, seasoned black beans, charred corn and peppers, finished with a cool, creamy roasted-jalapeño sauce.
Prep: 20 min | Cook: 30 min | Servings: 5 | Macros per bowl: ~625 cal | ~55g protein | ~79g carbs | ~10g fat
Ingredients:
- Chicken:
- 2 lb boneless, skinless chicken breast
- Juice of 2 limes
- 1 tbsp olive oil
- 2 tsp chili powder
- 1½ tsp smoked paprika
- 1 tsp cumin
- 1 tsp garlic powder
- ½ tsp oregano
- Salt and black pepper
- Bowls:
- 1⅔ cups uncooked long-grain or jasmine rice
- 1 15-oz can black beans, drained and rinsed
- 1½ cups frozen or fresh corn
- 2 bell peppers, sliced
- ½ small onion, sliced
- Juice of 1 lime
- ¼ cup chopped cilantro
- Salt
- Roasted Jalapeño-Lime Crema:
- ¾ cup plain Greek yogurt
- 1 jalapeño
- Juice and zest of 1 lime
- 1 small garlic clove
- 2 tbsp cilantro
- Salt

Instructions:
- Combine the chicken with the lime juice, olive oil, chili powder, smoked paprika, cumin, garlic powder, oregano, salt and pepper in a bowl or resealable bag. Toss until every piece is well coated, then marinate for 20–30 minutes while you work on the other recipes.
- Cook the rice according to package directions. Once it’s done, fluff it with a fork and fold in the lime juice, chopped cilantro and a pinch of salt. Taste and adjust the seasoning.
- Roast or sauté the sliced peppers, onions and corn over relatively high heat, stirring occasionally. You actually want some dark, charred edges here—the vegetables should taste roasted rather than steamed. Remove from heat once they have good color.
- Cook the marinated chicken in a very hot skillet, grill pan or on the grill until well browned on the outside and it reaches 165°F internally, about 5–7 minutes per side depending on thickness. Rest the chicken for 5 minutes before slicing it against the grain.
- For the crema, char the jalapeño in a dry skillet or directly over a flame until softened and blistered on all sides. Remove the stem, then blend with the Greek yogurt, lime zest and juice, garlic, cilantro and salt until completely creamy and smooth.
- Divide the cilantro rice, black beans, roasted vegetables and sliced chicken among five containers, keeping the components in separate sections if you prefer.
- Do not put the crema in the freezer bowls. Portion it separately into small containers so it stays fresh and creamy.
Store + reheat: Refrigerate the first 2–3 bowls and freeze the later-week portions. The crema stays refrigerated in separate containers. Transfer a frozen bowl to the refrigerator the night before you plan to eat it. Microwave the bowl loosely covered until steaming hot, stirring halfway through. Add a tiny splash of water before heating if the rice looks dry. Then add the cold jalapeño-lime crema—the hot/cold contrast is part of what makes this feel freshly made.
Dinner
Sticky Smoky BBQ Turkey Meatballs
with Garlic-Butter Rice & Crispy Roasted Broccoli

Makes 5 servings. Tender, juicy turkey meatballs glazed in smoky-sweet BBQ sauce with buttery garlic rice and deeply roasted broccoli.
Prep: 20 min | Cook: 30 min | Servings: 5 | Macros per serving: ~665 cal | ~42g protein | ~87g carbs | ~16g fat
Ingredients:
- Turkey Meatballs:
- 2 lb 93% lean ground turkey
- ½ cup panko breadcrumbs
- 1 large egg
- ½ small yellow onion, finely grated
- 3 garlic cloves, minced
- 1 tbsp Worcestershire sauce
- 1½ tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- ¾ tsp kosher salt
- Black pepper
- Sticky BBQ Glaze:
- 1 cup BBQ sauce
- 1 tbsp honey
- 1 tbsp Worcestershire sauce
- 1 tsp apple cider vinegar
- ½ tsp smoked paprika
- Garlic-Butter Rice:
- 1⅔ cups uncooked jasmine rice
- 1 tbsp butter
- 2 garlic cloves, minced
- Salt
- Broccoli:
- 2 large heads broccoli / about 1½ lb florets
- Cooking spray or a small amount of olive oil
- Garlic powder
- Salt and pepper

Instructions:
- Heat oven to 425°F. Combine the turkey, panko, egg, grated onion, garlic, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt and pepper in a large bowl. Mix only until everything is just combined—overworking ground turkey makes the meatballs dense.
- Form the mixture into approximately 20 meatballs, which works out to four per serving. Roll them gently between your palms so they hold together without being compacted.
- Arrange the meatballs on a lined baking sheet and bake for approximately 15–18 minutes, until they are nearly cooked through and lightly browned on the outside.
- Meanwhile, combine the BBQ sauce, honey, Worcestershire, apple cider vinegar and smoked paprika in a small bowl, whisking until smooth.
- Brush the meatballs generously with the glaze and return them to the oven for another 5–7 minutes, until the glaze becomes sticky and caramelized and the centers reach 165°F.
- Cook the jasmine rice according to package directions. Melt the butter in a small pan over medium-low heat, gently cook the garlic until fragrant, about 30 seconds, then fold the garlic butter through the finished rice with a pinch of salt.
- Roast the broccoli at 425°F until browned with dark, crispy edges, about 20–25 minutes. Spread it in a single layer and avoid crowding the pan so it roasts rather than steams.
- Divide the rice and broccoli among five containers. Add four meatballs to each and spoon additional BBQ glaze over the top.
Store + reheat: Refrigerate 2–3 servings and freeze the remainder. For the frozen servings, slightly under-roasting the broccoli helps it retain better texture after reheating. Thaw overnight when possible. Microwave loosely covered until hot throughout. Add a tablespoon or so of water to the rice before reheating to restore moisture. Finish with a little extra warm BBQ glaze.
Snack
Honey-Vanilla Greek Yogurt Berry Crunch Bowls

Makes 5 servings. Creamy vanilla Greek yogurt sweetened with honey, juicy berries and a crunchy granola-almond topping.
Prep: 10 min | Cook: 0 min | Servings: 5 | Macros per bowl: ~390 cal | ~28g protein | ~55g carbs | ~7g fat
Ingredients:
- 5 cups plain nonfat Greek yogurt
- 5 tbsp honey
- 2 tsp vanilla extract
- Tiny pinch of flaky or kosher salt
- 2½ cups mixed strawberries, blueberries and/or raspberries
- 1¼ cups crunchy granola
- ¼ cup sliced almonds
- Optional: cinnamon

Instructions:
- Mix the Greek yogurt, honey, vanilla extract and a tiny pinch of salt in a bowl until completely smooth and evenly sweetened. Taste and add a little more honey if you prefer it sweeter.
- Divide the yogurt mixture among five jars or containers, leaving a little room at the top for the berries.
- Top each with about ½ cup of berries. If you want particularly delicate berries at their best by Friday, keep them separate and add them the day you eat each bowl.
- Mix the granola and sliced almonds together in a small bowl, then divide the mixture among five small containers or bags.
- Don’t put the granola on the yogurt Sunday. It’ll lose its crunch and turn soft by midweek.
- When ready to eat, sprinkle the granola-almond mixture over the cold yogurt and finish with an optional dusting of cinnamon.
Store: Keep refrigerated rather than frozen. Keep the crunchy topping dry and separate until the moment you eat.
