Amaranth Porridge

Creamy amaranth porridge made with dried apricots and cashew butter is topped with a bright raspberry–blood orange compote, pumpkin seed butter, and chopped pistachios. It’s a nutrient-dense breakfast that pairs iron-containing amaranth, seeds, and nuts with vitamin C-rich fruit.
Ingredients:
For the Amaranth
- 1 cup amaranth
- 4 dried apricots
- 1 1/2 tbsp cashew butter
- 1 3/4 cups water
- pinch salt
- 1/2 tsp cinnamon
- 1/2 tsp vanilla
- pinch cardamom
For the Compote
- 1 cup raspberries
- 1/2 blood orange (zested)
- 1/2 blood orange (juiced)
- a few segments blood orange
For the Topping
- 1-2 tbsp pumpkin seed butter
- 1-2 tbsp pistachios (chopped)
Ingredients are subject to availability at local stores. Unavailable items will be automatically substituted at best-effort.
Directions
- Soak the AMARANTH in plenty of water for 8–12 hours, then drain and rinse thoroughly.
- Blend the DRIED APRICOTS, CASHEW BUTTER, WATER, SALT, AND VANILLA until completely smooth.
- Add the AMARANTH, CINNAMON, AND CARDAMOM to a saucepan. Pour in the apricot-cashew mixture and simmer for 18–20 minutes, stirring occasionally, until creamy.
- Briefly blend about one-quarter of the cooked porridge, then stir it back into the remaining porridge for an extra-creamy texture.
- Add the RASPBERRIES AND BLOOD-ORANGE ZEST to a small saucepan and simmer for about 2–3 minutes.
- Remove the compote from the heat and stir in the BLOOD-ORANGE JUICE AND BLOOD-ORANGE SEGMENTS.
- Divide the amaranth porridge between two bowls. Spoon over the raspberry–blood orange compote and finish with PUMPKIN SEED BUTTER AND CHOPPED PISTACHIOS.
Recipe Notes
For a less-sweet porridge, reduce the dried apricots. Raquel also suggests stirring an egg into the porridge at the end of cooking, if desired, for additional creaminess and protein.
