A rich and hearty twist on classic spaghetti, simmered with Cajun “holy trinity” vegetables, ground beef, smoked sausage, and a robust tomato sauce full of deep, spicy flavor.

Directions

  1. Brown the Meats: In a large pot or skillet, brown the sliced smoked sausage. Once browned, remove it from the pot and set aside. In the remaining drippings, brown the ground beef.
  2. Sauté Vegetables: Add the chopped “trinity” (onion, bell pepper, and celery) to the pot and sauté until softened. Stir in the minced garlic and cook until fragrant.
  3. Build the Sauce: Add the tomato sauce, stewed tomatoes, and tomato paste to the pot. Season generously with Cajun seasoning, onion powder, garlic powder, salt, and pepper. Add a pinch of sugar to cut the acidity. Stir everything together well.
  4. Simmer: Return the browned sausage and ground beef to the pot. Bring the mixture to a simmer, then reduce the heat to low and let it cook for at least 1 to 2 hours (or longer, up to 6 hours, for a deeper flavor) to allow the flavors to meld and the sauce to thicken. Add a little water or beef broth if it becomes too thick.
  5. Cook Pasta and Serve: While the sauce simmers, cook your spaghetti noodles according to package directions.
  6. Finish: Serve the hearty Cajun meat sauce over the cooked spaghetti and garnish with fresh parsley.
