Cajun Spaghetti

A rich and hearty twist on classic spaghetti, simmered with Cajun “holy trinity” vegetables, ground beef, smoked sausage, and a robust tomato sauce full of deep, spicy flavor.
Ingredients:
- 1 lb ground beef
- 1 pack smoked sausage (sliced)
- 1 large yellow onion (chopped)
- 1 large green bell pepper (chopped)
- 2-3 celery ribs (chopped)
- 4-5 cloves garlic (minced)
- 1 29 oz xan tomato sauce
- 1 14.5 oz can stewed tomatoes (don't drain)
- 1 6 oz can tomato paste
- 1 lb spaghetti noodles
- 2-3 tbsp cajun seasoning
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp salt (to taste)
- 1 tsp black pepper (to taste)
- 1-2 tsp granulated sugar (start with 1 tsp and adjust after simmering)
- 1/2 - 1 cup water (or low sodium beef broth (as needed for consistency))
- 1 tsp fresh parsley (chopped (for garnish))

Directions
- Brown the Meats: In a large pot or skillet, brown the sliced smoked sausage. Once browned, remove it from the pot and set aside. In the remaining drippings, brown the ground beef.
- Sauté Vegetables: Add the chopped “trinity” (onion, bell pepper, and celery) to the pot and sauté until softened. Stir in the minced garlic and cook until fragrant.
- Build the Sauce: Add the tomato sauce, stewed tomatoes, and tomato paste to the pot. Season generously with Cajun seasoning, onion powder, garlic powder, salt, and pepper. Add a pinch of sugar to cut the acidity. Stir everything together well.
- Simmer: Return the browned sausage and ground beef to the pot. Bring the mixture to a simmer, then reduce the heat to low and let it cook for at least 1 to 2 hours (or longer, up to 6 hours, for a deeper flavor) to allow the flavors to meld and the sauce to thicken. Add a little water or beef broth if it becomes too thick.
- Cook Pasta and Serve: While the sauce simmers, cook your spaghetti noodles according to package directions.
- Finish: Serve the hearty Cajun meat sauce over the cooked spaghetti and garnish with fresh parsley.
