This homemade Pumpkin Seed Butter transforms lightly roasted pumpkin seeds into a smooth, creamy spread with a touch of honey and sea salt. It’s a simple, nutrient-dense option for spreading on toast, stirring into oatmeal or yogurt, blending into smoothies, drizzling over fruit, or enjoying by the spoonful.
Directions
- Preheat the oven to 150°C / 300°F.
- Spread the PUMPKIN SEEDS evenly on a baking sheet and lightly roast for 15 MINUTES.
- Remove the pumpkin seeds from the oven and allow them to cool before blending.
- Transfer the cooled pumpkin seeds to a high-powered blender or food processor.
- Blend for approximately 15 MINUTES, stopping periodically to scrape down the sides. Be patient as the seeds gradually transform from crumbs into a thick paste and eventually a smooth, creamy seed butter as their natural oils release.
- Toward the end of blending, add 1–2 TABLESPOONS HONEY, adjusting the amount to your preferred sweetness.
- Add a PINCH OF SEA SALT and continue blending until incorporated.
- If the pumpkin seed butter needs help reaching a smooth, creamy consistency, add 1–2 TABLESPOONS AVOCADO OIL only as needed and continue blending.
- Serve the finished pumpkin seed butter on toast, stir it into oatmeal or yogurt, blend it into smoothies, drizzle it over fruit, or enjoy it by the spoonful.
Serving Tip
Pair pumpkin seed butter with vitamin C-rich foods, such as berries or other fruit, to support the absorption of plant-based iron.
