Tender Cajun-spiced chicken rests atop a bed of creamy linguine tossed in a rich garlic parmesan sauce, creating the perfect balance of spicy and savory flavors.

Directions

  1. Bring a large pot of salted water to a boil and cook the linguine until just al dente. Save 1/4 cup of the pasta water before draining, then set the noodles aside.
  2. While the pasta cooks, season both sides of the chicken breasts with Cajun seasoning.
  3. In a large skillet over medium-high heat, heat the olive oil and 1 tablespoon of butter. Add the chicken and sear for 5 to 7 minutes on each side until golden and fully cooked through. Transfer to a plate and let it rest.
  4. To the same skillet, reduce heat to medium. Pour in the chicken broth and heavy cream, stirring up all the tasty browned bits stuck to the bottom. Let it bubble gently for 3 to 4 minutes until slightly thickened, then remove from heat.
  5. In another skillet or saucepan, melt 4 tablespoons of butter over medium heat. Sauté the garlic for about 1 minute, just until fragrant. Stir in the heavy cream and bring to a soft simmer. Add Parmesan cheese and whisk until smooth and creamy. Season with salt and pepper to taste.
  6. Add the cooked linguine to the Parmesan sauce and toss to coat. Stir in a splash of the reserved pasta water if the sauce needs thinning.
  7. Slice the rested chicken and lay it over the creamy pasta. Finish with a sprinkle of fresh parsley, chopped basil, and more Parmesan if desired.
