This is one of my favorite easy dinners: rice, seasoned ground beef, deeply roasted sweet potatoes, and plenty of feta. I mix tzatziki, roasted red pepper hummus, and Greek dressing into a creamy sauce that brings the whole bowl together.

Seasonings of choice: Use your preferred seasonings for the ground beef and adjust the amounts to your taste.

Make it your own: Add lettuce, tomatoes, olives, or avocado if you enjoy them. You can also use quinoa instead of rice.

Directions

  1. Preheat the oven to 450°F (230°C). Cut the sweet potatoes into small cubes and spread on a baking sheet. Toss with olive oil, salt, black pepper, garlic powder, onion powder, and smoked paprika.
  2. Roast the sweet potatoes for 25–30 minutes, turning partway through, until tender with browned edges.
  3. Cook the rice according to its package directions, adding butter, salt, and black pepper to the cooking water. If using quinoa, follow its package directions instead.
  4. Brown the ground beef in a skillet, breaking it into crumbles and adding your preferred seasonings. Cook until the beef reaches 160°F (71°C), then drain excess fat if needed.
  5. Stir together the tzatziki and roasted red pepper hummus, then mix in Greek dressing until the sauce reaches your preferred flavor and consistency. If you don’t have tzatziki, use plain Greek yogurt, chopped pickles, and a little pickle juice instead.
  6. Start each bowl with rice, then add the ground beef and roasted sweet potatoes. Spoon over the dressing and finish with crumbled feta. Add optional lettuce, tomatoes, olives, or avocado and serve.
