Directions

Ingredients
- □ 1 large cucumber
- □ 4-6 slices deli turkey
- □ 2 tbsp mayonnaise
- □ 1 tsp mustard
- □ 2 tbsp red onion, finely diced
- □ ½ avocado, diced
- □ Chili sauce (for dipping)
Directions
- Cut cucumber in half lengthwise and scoop out the seeds to create a boat shape.
- In a small bowl, mix turkey (chopped), mayonnaise, mustard, and red onion.
- Fill the cucumber boat with the turkey mixture.
- Top with diced avocado.
- Serve with chili sauce for dipping.
Dinner: Lettuce Tacos with Ground Beef

Serves 1 • Time 20 minutes
Ingredients
- □ ½ lb ground beef
- □ ¼ onion, sliced or diced
- □ ½ tomato, diced
- □ Fresh cilantro, chopped
- □ 3-4 large lettuce leaves (butter, romaine, or iceberg)
- □ Dairy-free sour cream
- □ Tapatío sauce
- □ Salt and pepper to taste
- □ 1 tbsp oil for cooking
Directions
- Heat 1 tbsp oil in a skillet over medium-high heat.
- Add ground beef and cook until browned, breaking it up with a spoon (about 7-8 minutes).
- Add onions and cook until soft, about 3-4 minutes.
- Season with salt and pepper to taste.
- Warm lettuce leaves slightly if desired.
