- 1 tbsp ginger (freshly grated)
- 4 green onions (sliced and divided into greens and whites)

Ingredients are subject to availability at local stores. Unavailable items will be automatically substituted at best-effort.
Directions
- If serving with rice, start cooking it now.
- Drain firm tofu, dry it well, and cut into bite-sized cubes.
- Heat oil in a large sauté pan over medium heat. Add the tofu and cook until golden brown and crispy, about 10-15 minutes. Remove tofu from the pan and set aside.
- If no oil remains in the pan, add a splash. Add minced garlic, grated ginger, and the white parts of sliced green onions. Cook until soft and fragrant, 1-2 minutes.
- Stir in soy sauce, brown sugar, and tomato paste, bringing to a gentle simmer.
- In a separate small bowl, stir together cornstarch and water to make a slurry. Add it to the pan and stir well, cooking at a simmer for 2-3 minutes until the sauce thickens.
- Reduce heat to low. Transfer the crispy tofu back to the pan, cover, and cook for 10-15 minutes, stirring occasionally.
- Serve warm over rice, topped with the reserved green parts of the green onions and a sprinkle of sesame seeds.
