A vibrant, hearty salad topped with juicy grilled steak, creamy avocado, and a bright, herbaceous chimichurri dressing. Perfect for a light dinner or a show-stopping lunch.

Directions

  1. In a large bowl, mix together arugula, sliced red onion, sliced green onion, and crumbled feta cheese.
  2. In a separate small bowl, whisk together the chimichurri dressing ingredients: finely chopped parsley, olive oil, red wine vinegar, minced garlic, dried oregano, and salt. Set aside.
  3. Season skirt steak (or flap steak/ribeye) generously with salt and pepper. Grill over high heat to your desired doneness. Let rest for 5 minutes, then slice thinly against the grain.
  4. Arrange the salad mixture in a bowl or on a platter. Top with the sliced steak and sliced avocado.
  5. Drizzle the chimichurri dressing generously over the steak and salad. Sprinkle with a little extra salt if desired.
  6. Serve immediately and enjoy!
