A vibrant, hearty salad topped with juicy grilled steak, creamy avocado, and a bright, herbaceous chimichurri dressing. Perfect for a light dinner or a show-stopping lunch.
Ingredients:
For the Salad
- 1 pack arugala
- red onion (sliced)
- green onion (sliced)
- feta cheese
- avocado (sliced)
For the Chimichurri Dressing
- 1/2 cup finely chopped parsley
- 1/2 cup olive oil
- 2 tbsp red wine vinegar
- 3 cloves garlic (minced)
- 3/4 tsp dried oregano
- 1 tsp salt
For the Steak
- skirt steak (you can also sub with flap steak, ribeye, chicken, salmon, or shrimp)
- salt

Directions
- In a large bowl, mix together arugula, sliced red onion, sliced green onion, and crumbled feta cheese.
- In a separate small bowl, whisk together the chimichurri dressing ingredients: finely chopped parsley, olive oil, red wine vinegar, minced garlic, dried oregano, and salt. Set aside.
- Season skirt steak (or flap steak/ribeye) generously with salt and pepper. Grill over high heat to your desired doneness. Let rest for 5 minutes, then slice thinly against the grain.
- Arrange the salad mixture in a bowl or on a platter. Top with the sliced steak and sliced avocado.
- Drizzle the chimichurri dressing generously over the steak and salad. Sprinkle with a little extra salt if desired.
- Serve immediately and enjoy!
