Wild Blueberry Banana Bread
Ripe bananas, almond milk, and wild blueberries come together in this gluten-free oat flour loaf. Let it cool completely before slicing, then save a portion for tomorrow’s breakfast or coffee break.
Pan: 9 × 5-inch loaf pan | Cooling: Completely before slicing

- 1 tsp alcohol-free vanilla extract
- 1/2 cup unsweetened almond milk

- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup frozen wild blueberries

Ingredients are subject to availability at local stores. Unavailable items will be automatically substituted at best-effort.
Directions
1. Prepare the oven and pan. Preheat the oven to 350°F. Line a 9 × 5-inch loaf pan with parchment paper.
2. Mix the wet ingredients. Mash the 3 ripe bananas in a bowl with a fork. Add the maple syrup, coconut sugar, alcohol-free vanilla extract, and unsweetened almond milk. Mix well.
3. Combine the dry ingredients. In another bowl, whisk the gluten-free oat flour, sea salt, baking powder, and baking soda until evenly combined and free of lumps.
4. Make the batter. Add the wet mixture to the dry ingredients and fold gently until the batter is uniform. Add the frozen wild blueberries and stir gently, just enough to incorporate them.
5. Fill and bake. Pour the batter into the prepared pan. Add the optional chopped walnuts on top if using. Bake for 40 minutes.
6. Finish in the switched-off oven. Turn the oven off and leave the loaf inside for 10 more minutes, following the original recipe’s method.
7. Cool completely. Remove the loaf from the oven and let it cool completely before slicing. The original recipe does not give a cooling duration, so check that the center no longer feels warm.
Texture Fix: Keep the Moisture, Let It Cool
Keep the listed moisture. Use all 3 ripe bananas and the ½ cup almond milk. Spoon the oat flour into the measuring cup and level without packing. Do not add extra flour just because the batter looks moist.
When to pull it: The original method calls for 40 minutes at 350°F, followed by 10 minutes in the switched-off oven. Use the specified pan size. If the middle is visibly wet or liquid after that finish, it needs further baking.
Wait before slicing. A hot loaf is delicate. Let it cool completely before cutting so you can judge the finished texture.
Day 2: Tomorrow’s Coffee Break Is Ready
Once completely cool, keep tomorrow’s portion in an airtight container at room temperature. Slice and freeze the extra portions with parchment between them.
Warm a slice: Microwave a room-temperature slice for 10 seconds, then check. Add 5 seconds at a time if needed. Thaw a frozen slice while wrapped before warming.
