The Best Green Goddess Salad and Dressing

A vibrant, crunchy salad packed with fresh greens and herbs, tossed in an incredibly creamy and herbaceous avocado-based Green Goddess dressing. It’s healthy, satisfying, and bursting with flavor.
Ingredients:
- 1/2 head cabbage (cubed)
- 3 cups arugula
- 1 large cucumber (diced)
- 1/4 cup basil leaves
- 1.5 lemons (juiced)
- 1 avocado
- 1/2 cup avocado oil
- 1/4 - 1/2 cup water (for blending)
- 1/4 cup green onions (thinly sliced)
- 1/4 cup dill
- 1 cup basil leaves
- 2 cloves garlic (minced)
- 1 tsp salt (to taste)
- 1 tsp pepper (to taste)

Directions
- Prepare the Salad: In a large salad bowl, combine the cubed cabbage, arugula, diced cucumber, and 1/4 cup basil leaves. Mix gently to combine.
- Make the Dressing: To a blender or using an immersion blender, add the juice of 1.5 lemons, avocado, avocado oil, 1/4 to 1/2 cup water, sliced green onions, dill, 1 cup basil leaves, minced garlic, salt, and pepper.
- Blend until completely smooth and creamy. Add water as needed to reach your desired consistency—it should be thick but pourable. Taste and adjust salt and pepper as needed.
- Combine and Serve: Pour the desired amount of dressing over the salad and toss until everything is evenly coated. Serve immediately.
