A vibrant, crunchy salad packed with fresh greens and herbs, tossed in an incredibly creamy and herbaceous avocado-based Green Goddess dressing. It’s healthy, satisfying, and bursting with flavor.

Directions

  1. Prepare the Salad: In a large salad bowl, combine the cubed cabbage, arugula, diced cucumber, and 1/4 cup basil leaves. Mix gently to combine.
  2. Make the Dressing: To a blender or using an immersion blender, add the juice of 1.5 lemons, avocado, avocado oil, 1/4 to 1/2 cup water, sliced green onions, dill, 1 cup basil leaves, minced garlic, salt, and pepper.
  3. Blend until completely smooth and creamy. Add water as needed to reach your desired consistency—it should be thick but pourable. Taste and adjust salt and pepper as needed.
  4. Combine and Serve: Pour the desired amount of dressing over the salad and toss until everything is evenly coated. Serve immediately.
