These Rice Paper Burger Pops turn burger night into a crispy, high-protein snackable meal. Lean ground beef, red onion, lettuce, and low-fat mozzarella are wrapped in egg-dipped rice paper, baked until golden, and served with a tangy Greek yogurt burger sauce. They deliver all the flavors of a cheeseburger in a fun, crunchy, macro-friendly bite.

Directions

  1. Preheat your oven to 425°F.
  2. Finely dice the red onion.
  3. In a bowl, mix the lean ground beef, salt, black pepper, minced garlic, diced red onion, and onion powder until combined.
  4. Whisk the eggs in a small bowl.
  5. Dip one sheet of rice paper into the whisked eggs until coated.
  6. Place the wet rice paper onto a piece of parchment paper lightly coated with spray oil.
  7. Add one-third of the beef mixture, two green leaf lettuce leaves, and one-third of the low-fat mozzarella cheese in a long line from the top of the rice paper to the bottom.
  8. Fold the rice paper over the filling to create a long, thin log or burrito shape.
  9. Repeat with the remaining rice paper sheets and filling.
  10. Use scissors to cut each rice paper log into 1-inch pieces.
  11. Spray the burger pops with spray oil and bake for 8–10 minutes, or until fully cooked through and crispy golden brown.
  12. In a bowl, mix the Greek yogurt, ketchup, Worcestershire sauce, pickle juice, Dijon mustard, garlic powder, and onion powder until smooth.
  13. Serve the crispy burger pops with the dipping sauce and enjoy.
