Ingredients:

- 4 oz cooked chicken breast
- 1/2 cup corn
- 2 tbsp cotija cheese
- 2 tbsp plain Greek yogurt
- 1 tsp lime juice
- chili powder (to taste)
- cilantro (optional)

Instructions
Step 1: Heat the Rice
Microwave rice according to package instructions.
Step 2: Heat Chicken and Corn
Place chicken and corn in a microwave-safe bowl.
Microwave 45–60 seconds.
Step 3: Make the Lime Crema
Mix:
- Greek yogurt
- Lime juice
- Pinch chili powder
Step 4: Assemble
Add rice to serving bowl.
Top with chicken and corn.
Step 5: Finish
Sprinkle with cotija.
Drizzle with lime crema.
Add cilantro if desired.
Serve immediately.
