This Mediterranean fish recipe pairs tender white fish fillets with juicy cherry tomatoes, briny black and green olives, garlic, parsley, and fragrant herbs. Everything cooks together in one pan, creating a rich tomato sauce that keeps the fish moist and flavorful.

Directions

  1. Heat 1 tablespoon of the OLIVE OIL in a large skillet or oven-safe pan over medium heat.
  2. Add the minced GARLIC and sauté for 30–60 seconds, stirring frequently, until fragrant.
  3. Add the CHERRY TOMATOES, TOMATO PASTE, and BAY LEAF.
  4. Season the tomato mixture with SALT and BLACK PEPPER.
  5. Stir everything together and cook for 5–7 minutes, until the tomatoes begin to soften and release their juices.
  6. Gently press some of the tomatoes with the back of a spoon to help create a chunky sauce.
  7. Nestle the WHITE FISH FILLETS into the tomato mixture.
  8. Lightly season the tops of the fish with additional SALT and BLACK PEPPER.
  9. Scatter the BLACK AND GREEN OLIVES around the fish.
  10. Sprinkle the chopped PARSLEY and MEDITERRANEAN HERB SEASONING over the fish and sauce.
  11. Drizzle the remaining OLIVE OIL over the fish.
  12. Cover the skillet and cook over medium-low heat for 8–12 minutes, depending on the thickness of the fillets.
  13. Continue cooking until the fish is opaque, flakes easily with a fork, and reaches an internal temperature of 145°F.
  14. Remove and discard the bay leaf.
  15. Spoon the tomatoes, olives, and sauce over the fish and serve immediately.
