Instructions
Make jerk marinade: In a bowl, mix 2 tbsp oil, 1 tbsp brown sugar, 1 tbsp jerk seasoning (or make your own: 2 tsp allspice + 1 tsp thyme + 1 tsp garlic powder + ½ tsp cayenne), 1 tsp salt, and ½ tsp black pepper.
Marinate chicken: Place 4 chicken thighs or drumsticks in a bowl. Rub jerk marinade all over chicken, coating thoroughly. Cover and refrigerate for at least 30 minutes (or overnight for best flavor).
Prep coating: In a shallow dish, mix ½ cup flour with 1 tsp additional jerk seasoning. In another dish, beat 1 egg with 2 tbsp milk or water. This creates a double coating for extra crispiness.
Coat chicken: Take each marinated chicken piece, dredge in seasoned flour, dip in egg mixture, then dredge again in flour. Press flour firmly to adhere. Place on a plate while oil heats.
Fry to perfection: Heat 1 inch of oil in a deep skillet to 350°F (medium-high heat). Fry chicken 8-10 minutes per side until golden brown and internal temperature reaches 165°F. Drain on paper towels. Rest 5 minutes before serving.
