Escape to the tropics with this vibrant, layered mango-pineapple electrolyte drink! A smooth, golden mango puree sits at the bottom while a refreshing pineapple-coconut blend floats on top. It’s like a vacation in a glass—completely natural and hydrating.

Directions

  1. Make the Mango Puree: In a wide-mouth jar, combine 1 cup mango chunks, 1½ tablespoons lime juice, and 1 teaspoon maple syrup or honey. Blend using an immersion blender until completely smooth. Set aside.
  2. Make the Pineapple Coconut Base: In a separate blender, combine 2½ cups coconut water, 1½ cups pineapple chunks, 1 tablespoon lime juice, 1 tablespoon toasted coconut chips (optional), ¼–½ teaspoon salt, and 1–2 tablespoons honey or maple syrup. Blend on high until completely smooth and creamy.
  3. Assemble: Fill two glasses with ice. Spoon about ¼ cup of the mango puree into the bottom of each glass.
  4. Slowly strain the pineapple-coconut mixture over the mango base to create a beautiful layered effect—the pale golden pineapple will float on top of the vibrant orange mango puree.
  5. Stir before sipping and garnish with a pineapple wedge and a sprinkle of toasted coconut. Enjoy!
