The authentic, Italian way to make Alfredo sauce—no cream, no processed ingredients, just butter, Parmigiano, and pasta water. This silky, creamy sauce comes together in minutes and is a million times better than anything from a jar. Simple, elegant, and incredibly delicious.

Directions

  1. Bring a large pot of salted water to a boil. Cook pasta according to the package instructions.
  2. While the pasta cooks, shave or grate Parmigiano cheese. In a large skillet, melt butter over low heat.
  3. When the pasta is about 2 minutes under the instructed cooking time, transfer it directly from the pot to the skillet using tongs. Add a splash of pasta water.
  4. Stir until almost all the water has evaporated, then turn off the heat.
  5. Add the shaved Parmigiano cheese and whisk energetically until the sauce is uniform, smooth, and creamy.
  6. Season with salt and black pepper to taste. Serve immediately and enjoy!
