Directions

  1. Dice the CUCUMBER, removing the seeds to preserve its texture and help prevent excess moisture from making the salad soggy.
  2. Dice the RED PEPPER and thinly slice the SPRING ONION.
  3. Add the cucumber, red pepper, spring onion, CAPERS, PARSLEY, FRESH MINT, POMEGRANATE SEEDS, PUMPKIN SEEDS, optional SPROUTS, and drained BEANS to a large bowl.
  4. Finely grate the zest of one LEMON directly over the salad.
  5. Add the precooked QUINOA and toss everything together until evenly combined.
  6. Season with SALT and BLACK PEPPER to taste.
  7. Squeeze fresh LEMON JUICE over the salad and drizzle generously with EXTRA-VIRGIN OLIVE OIL.
  8. Add the FETA and gently toss or crumble it over the finished salad before serving.
