This macro-friendly Spaghetti O’s & Meatballs recipe turns lean ground beef, ring pasta, tomato sauce, bone broth, parmesan, and herbs into a high-protein comfort meal that feels nostalgic but fits your goals.
Ingredients:
For the Spaghetti O's
- 200 g ring pasta (any pasta will work though)
- 65 g tomato paste
- 3 cloves garlic (minced)
- 4 cups beef bone broth
- 225 g marinara
- 1 tsp onion powder
- 2 g zero calorie sweetener
- 1 big pinch sea salt
- 15 g parmesan
- 8 g nutritional yeast
- basil
For the Mini Meetballs
- 16 oz 96/4 lean ground beef
- 25 g yellow mustard
- 15 g parmesan
- 8 g parsley
- 2 g basil
- 3 cloves garlic (minced)
- 1 tsp sea salt
- 1 tsp black pepper
- 1 tsp oregano
Ingredients are subject to availability at local stores. Unavailable items will be automatically substituted at best-effort.
Directions
- Add all mini meatball ingredients to a bowl and mix until combined.
- Form the mixture into about 45 mini meatballs and set aside.
- Preheat a stovetop pan to medium heat and spray with nonstick olive oil spray.
- Add the tomato paste and minced garlic. Cook for about 1 minute.
- Add the marinara, beef bone broth, onion powder, zero-cal sweetener, and a big pinch of sea salt. Simmer for 12–15 minutes.
- Add the ring pasta and cook for another 10 minutes, or until the sauce thickens into a Spaghetti O’s-style consistency.
- While the pasta cooks, brown the outside of the mini meatballs in another pan.
- Add the browned meatballs to the Spaghetti O’s mixture and continue cooking until fully cooked through.
- Stir in the parmesan and nutritional yeast.
- Top with a little extra parmesan and fresh basil, then enjoy.
