This Southern Smothered Pork Chops recipe starts with seasoned, lightly dredged pork chops that are browned until golden before being simmered in a rich homemade onion and pepper gravy. It is classic Southern comfort food that is simple to make and packed with savory flavor.

Directions

  1. Pat the PORK CHOPS dry and season both sides generously with your favorite all-purpose seasoning along with SALT, BLACK PEPPER, PAPRIKA, GARLIC POWDER, and ONION POWDER.
  2. In a shallow bowl, combine the ALL-PURPOSE FLOUR with additional SALT, BLACK PEPPER, PAPRIKA, GARLIC POWDER, and ONION POWDER.
  3. Dredge each seasoned pork chop in the flour mixture, coating both sides evenly.
  4. Heat the COOKING OIL in a large skillet over medium-high heat.
  5. Brown the pork chops on both sides until a golden crust forms. They do not need to be fully cooked at this stage.
  6. Remove the pork chops from the skillet and set them aside.
  7. Add the ONIONS, BELL PEPPERS, and MUSHROOMS to the same skillet and sauté until they begin to soften.
  8. Sprinkle the vegetables with FLOUR and stir continuously until everything is evenly coated.
  9. Slowly pour in the BEEF STOCK, stirring constantly until a smooth gravy forms.
  10. Season the gravy with SALT, BLACK PEPPER, PAPRIKA, GARLIC POWDER, and ONION POWDER.
  11. Return the browned pork chops to the skillet, nestling them into the gravy.
  12. Cover and simmer until the pork chops are tender and fully cooked and the gravy has thickened.
  13. Spoon the onion gravy generously over each pork chop before serving.
