A delicious, high-protein twist on the classic breakfast sandwich! Crispy protein waffles replace the traditional bun, layered with melted cheese, savory turkey bacon, and perfectly fried eggs. It’s a satisfying, macro-friendly morning meal that tastes just like a McGriddle.
Ingredients:
- 2 protein waffles (froze, Kodiak mix or similar)
- 2 large eggs
- 2 slices turkey bacon
- 1 slice shredded cheese (or 1 string cheese oulled apart)
- salt (to taste)
- pepper (to taste)
- sugar-free maple syrup (optional)
Ingredients are subject to availability at local stores. Unavailable items will be automatically substituted at best-effort.
Directions
- Toast the 2 frozen protein waffles according to package instructions until crisp and golden. Set aside.
- In a skillet over medium heat, cook 2 slices turkey bacon until crispy, about 3–4 minutes per side. Remove and set aside.
- In the same skillet, fry 2 eggs to your preference (sunny-side up or over-easy works great for that McGriddle-style richness). Season with salt and pepper to taste.
- Assemble the sandwich: place one toasted waffle on the bottom, layer with 1 slice shredded cheese (or 1 string cheese, pulled apart), the crispy turkey bacon, the fried eggs, and top with the second waffle.
- Press down gently to let the cheese melt from the heat of the eggs.
- Serve warm with sugar-free maple syrup on the side for dipping or drizzling, if desired. Enjoy!
