Ingredients:
- 1 cup microwaveable rice
- 1/4 cup hummus
- 1/2 cup chickpeas
- 1/2 cup cucumber
- 1/2 cup cherry tomatoes
- 2 tbsp feta cheese
- 2 tbsp olives
- parsley (optional)
- wedge lemon (optional)

Instructions
Step 1: Heat the Rice
Microwave rice according to package directions.
Step 2: Warm the Chickpeas
Place chickpeas in a microwave-safe bowl.
Microwave 30–45 seconds.
Step 3: Build the Bowl
Add rice to serving bowl.
Arrange:
- Chickpeas
- Cucumbers
- Tomatoes
- Olives
- Feta
Step 4: Finish
Add hummus to one side of the bowl.
Garnish with parsley and lemon if desired.
Serve warm or room temperature.
