Microwave Meal System: Mediterranean Breakfast Potato Bowl

Ingredients:
For the Bowl
- 1 medium russet potatoes
- 3/4 cup liquid egg whites
- 1 cup baby spinach
- 1/2 cup tomatoes
- 2 tbsp crumbled feta cheese
For the Lemon Herb Yogurt Drizzle
- 2 tbsp plain Greek yogurt
- 1 tsp lemon juice
- 1/2 tsp dried parsley
- pinch garlic powder
- salt and pepper (to taste)

This bowl takes the comfort of a breakfast hash and gives it a Mediterranean-inspired twist. It combines protein-rich egg whites, fiber-rich potatoes, vegetables, and a bright lemon-herb yogurt sauce that makes the meal feel far more elevated than a typical microwave breakfast.
Instructions
Step 1: Cook the Potato
Wash the potato thoroughly.
Using a fork, poke several holes around the potato.
Place on a microwave-safe plate and microwave:
5–7 minutes
or until tender.
Allow to cool slightly.
Cut into bite-sized pieces.
Step 2: Make the Yogurt Drizzle
In a small bowl combine:
- Greek yogurt
- Lemon juice
- Parsley
- Garlic powder
- Salt
- Pepper
Mix until smooth.
Step 3: Cook the Egg Whites
Add egg whites to a microwave-safe bowl.
Microwave:
60 seconds
Stir.
Microwave another:
30–60 seconds
until fully cooked.
Step 4: Wilt the Spinach
Add spinach to the warm eggs.
Microwave:
20 seconds
until softened.
Step 5: Assemble
Add potatoes to a bowl.
Top with:
- Egg whites
- Spinach
- Tomatoes
- Feta
Drizzle with the lemon herb sauce.
Serve immediately.
