Prep fish & veggies: Pat 1 cod fillet (6-8 oz) dry with paper towels. Season both sides with salt and pepper. Chop ½ zucchini, ½ bell pepper, and ¼ onion into bite-sized pieces.

Sauté vegetables: Heat 1 tbsp oil in a skillet over medium-high heat. Add chopped vegetables and cook 5-6 minutes, stirring occasionally, until slightly softened and lightly browned.

Cook the cod: Push vegetables to sides of skillet, add cod fillet to center. Cook 3-4 minutes, then flip carefully. Add 1 tbsp butter, 2 lemon slices, and 1 minced garlic clove around the fish.

Finish & serve: Cook 3-4 more minutes until cod flakes easily with a fork. Squeeze fresh lemon juice over everything. Serve immediately with vegetables, garnished with fresh parsley if available.
