Fluffy, high-protein pancakes that are incredibly easy to make and absolutely delicious! Made with Greek yogurt and gluten-free flour, these pancakes are perfect for a healthy breakfast or post-workout meal. Serve with fresh berries and a drizzle of maple syrup for the ultimate morning treat.

Directions

  1. In a bowl, mix together the egg, Greek yogurt, maple syrup (or brown sugar), and vanilla extract until well combined.
  2. Add the gluten-free flour mix (or regular flour) and baking powder. Stir until just combined. If the batter seems too thick, add a couple of tablespoons more yogurt.
  3. Heat a non-stick skillet over medium heat. Pour about ¼ cup of batter onto the skillet for each pancake.
  4. Cook for 2-3 minutes, until bubbles form on the surface and the edges look set. Flip and cook for another 1-2 minutes, until golden brown and cooked through.
  5. Serve warm with fresh berries and a drizzle of maple syrup. Enjoy!
