High-Protein Fluffy Pancakes

Fluffy, high-protein pancakes that are incredibly easy to make and absolutely delicious! Made with Greek yogurt and gluten-free flour, these pancakes are perfect for a healthy breakfast or post-workout meal. Serve with fresh berries and a drizzle of maple syrup for the ultimate morning treat.
Ingredients:
- 1 egg
- 3/4 cup Greek yogurt
- 1-2 tsp maple syrup (or brown sugar)
- 1/2 tsp vanilla extract
- 1/2 cup gluten-free flour mix (or regular flour if you are not a coeliac/intolerant/IBS sufferer)
- 1 1/2 tsp baking powder

Directions
- In a bowl, mix together the egg, Greek yogurt, maple syrup (or brown sugar), and vanilla extract until well combined.
- Add the gluten-free flour mix (or regular flour) and baking powder. Stir until just combined. If the batter seems too thick, add a couple of tablespoons more yogurt.
- Heat a non-stick skillet over medium heat. Pour about ¼ cup of batter onto the skillet for each pancake.
- Cook for 2-3 minutes, until bubbles form on the surface and the edges look set. Flip and cook for another 1-2 minutes, until golden brown and cooked through.
- Serve warm with fresh berries and a drizzle of maple syrup. Enjoy!
