This grilled pineapple basil mocktail combines caramelized pineapple, honey, lemon juice, fresh basil, pineapple juice, and sparkling soda water. The muddled grilled fruit creates a sweet, smoky base while the basil and lemon keep the drink bright and refreshing.

Ingredients:
- pinapple (sliced, grilled)
- honey
- lemon juice
- basil leaves
- ice
- pineapple juice
- soda water
- 2 slices lemon (for garrnish)

Directions
- Preheat a grill pan or outdoor grill over medium-high heat.
- Place the sliced PINEAPPLE on the hot grill.
- Grill the pineapple for 2–3 minutes per side, or until visible grill marks form and the fruit begins to caramelize.
- Remove the grilled pineapple from the heat and transfer it to a mixing bowl.
- Add the HONEY and fresh LEMON JUICE to the grilled pineapple.
- Muddle the pineapple mixture until the fruit releases its juices and breaks down into small pieces.
- Divide the muddled pineapple mixture evenly between two tall serving glasses.
- Add the fresh BASIL LEAVES to the glasses.
- Fill each glass with ICE.
- Pour the PINEAPPLE JUICE into each glass, filling it most of the way while leaving room at the top.
- Top each drink with SODA WATER.
- Stir gently to combine the pineapple mixture, basil, juice, and soda water without losing too much carbonation.
- Place a LEMON SLICE at the top of each glass for garnish.
- Serve immediately while cold and sparkling.
