This easy sautéed spinach is a quick, flavorful side made with fresh spinach, thinly sliced garlic, olive oil, and bright lemon juice. Adding the garlic midway through cooking allows it to become golden and fragrant without burning, while the lemon adds a fresh finish.

Ingredients:
- spinach
- olive oil
- garlic (finely sliced)
- lemon (juiced)
- salt (to taste)
- black pepper (to taste)

Directions
- Wash and thoroughly dry the SPINACH. Removing excess water will help reduce splattering when the spinach is added to the hot pan.
- Heat 1 tablespoon of the OLIVE OIL in a large stainless-steel skillet over medium-high heat.
- Carefully add a portion of the SPINACH to the hot pan. The water naturally contained in the spinach may cause the oil to splatter.
- Stir the spinach continuously until it begins to wilt and creates enough room in the pan for another batch.
- Continue adding the remaining SPINACH in batches, stirring after each addition.
- Cook for 2–3 minutes, stirring frequently, until the spinach is wilted and most of the released liquid has evaporated.
- Push the spinach toward the sides of the skillet to create a small open well in the center of the pan.
- Pour the remaining tablespoon of OLIVE OIL into the center of the skillet.
- Add the thinly sliced GARLIC directly to the oil in the center of the pan.
- Cook the garlic for 30–60 seconds, or until it becomes lightly golden and fragrant. Watch it closely to prevent burning.
- Stir the garlic and oil into the wilted spinach until evenly combined.
- Season the spinach with SALT and BLACK PEPPER to taste.
- Continue cooking for about 1 minute, stirring frequently, until any remaining excess moisture has evaporated.
- Remove the skillet from the heat and drizzle the fresh LEMON JUICE over the spinach.
- Toss everything together and serve immediately while warm.
