  1. Cook the rigatoni pasta in salted water according to package directions. Reserve ¼ cup of the pasta water, then drain and set aside.
  2. Season the chicken with salt and pepper.
  3. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook until golden and fully cooked, about 6–8 minutes. Remove and set aside.
  4. In the same skillet, reduce heat to medium and add butter. Once melted, stir in the minced garlic and sauté for 1 minute.
  5. Pour in the heavy cream and the reserved pasta water. Bring to a simmer, then stir in the grated Parmesan cheese until smooth and creamy.
  6. Add the cooked rigatoni pasta and chicken back to the skillet. Toss to coat everything in the sauce.
  7. Serve warm, optionally garnished with chopped fresh parsley.
