Directions

  1. Cook 1 box chickpea pasta (or high-protein pasta of choice) according to package directions. Before draining, reserve ¼ cup pasta water. Drain the pasta and set aside.
  2. While the pasta cooks, heat 1 tbsp olive oil in a large skillet over medium heat. Add 1 lb diced chicken breast, season with salt and pepper, and cook until golden brown and cooked through, about 6–8 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add 1 cup cottage cheese, ½ cup shredded cheese, and the reserved ¼ cup pasta water. Stir over low heat until the mixture is smooth and creamy, about 2–3 minutes.
  4. Return the cooked pasta and chicken to the skillet. Toss everything together until well coated in the sauce. Season with red pepper flakes and additional salt if needed.
  5. Serve warm, garnished with fresh parsley or crumbled turkey bacon if desired. Enjoy!
