Creamy Cottage Cheese Protein Pasta

A rich, creamy pasta that’s packed with protein and ready in under 30 minutes! Chickpea pasta and tender chicken are coated in a velvety cottage cheese sauce that’s silky smooth and incredibly satisfying. The perfect weeknight dinner that tastes indulgent but fuels you right.
Ingredients:
- 1 lb chickpea pasta
- 1 lb chicken breast (diced)
- 1 cup cottage cheese
- 1/2 cup shredded cheese
- 1/4 cup reserved pasta water
- 1 tbsp olive oil
- 2 cloves garlic (minced)
- salt (to taste)
- pepper (to taste)
- red pepper flakes (to taste)

Directions
- Cook 1 box chickpea pasta (or high-protein pasta of choice) according to package directions. Before draining, reserve ¼ cup pasta water. Drain the pasta and set aside.
- While the pasta cooks, heat 1 tbsp olive oil in a large skillet over medium heat. Add 1 lb diced chicken breast, season with salt and pepper, and cook until golden brown and cooked through, about 6–8 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add 1 cup cottage cheese, ½ cup shredded cheese, and the reserved ¼ cup pasta water. Stir over low heat until the mixture is smooth and creamy, about 2–3 minutes.
- Return the cooked pasta and chicken to the skillet. Toss everything together until well coated in the sauce. Season with red pepper flakes and additional salt if needed.
- Serve warm, garnished with fresh parsley or crumbled turkey bacon if desired. Enjoy!
