Cottage Cheese Alfredo

A creamy, high-protein Alfredo sauce made with cottage cheese! This healthy twist on the classic is just as rich and satisfying as the original, but packed with protein and simple ingredients. Ready in minutes and perfect over your favorite pasta.
Ingredients:
- 1 1/2 cups low fat cottage cheese
- 3/4 cup milk
- 2-3 cloves garlic
- 2 tbsp extra virgin olive oil
- 3 tbsp unsalted butter (melted, or substitue additional olive oil)
- 1 1/2 cups grated parmesan cheese (preferably freshly grated Parmigiano-Reggiano, plus more for topping)
- salt (to taste)
- fresh cracked pepper (to taste)
- fresh parsley (chopped, optional, for garnish)

Directions
- In a blender, combine lowfat cottage cheese, milk of your choice, fresh garlic, extra-virgin olive oil, melted unsalted butter, and grated parmesan cheese. Blend until completely smooth and creamy.
- Heat a sauté pan over medium-low heat. Pour the blended mixture into the pan.
- Cook, stirring frequently, until the sauce is heated through and has thickened to your desired consistency. If the mixture gets too thick, add an extra splash of milk to thin it out.
- Taste and season with salt and fresh cracked pepper as needed.
- If serving with pasta, cook pasta according to package directions and reserve about 1 cup of pasta water. Add the cooked pasta to the sauce, along with pasta water as needed to thin the sauce to your preference.
- Serve with your protein of choice. Garnish with additional parmesan cheese and chopped fresh parsley. Enjoy!
