Transform humble cabbage into the star of your table! These thick-cut cabbage steaks are roasted until tender and caramelized, then finished with a bright, herby compound butter that melts into every crevice. A simple, elegant, and budget-friendly side dish.
Ingredients:
Cabbage Steaks
- 1 medium head of green cabbage
- 2 tbsp extra-virgin olive oil
- 1/2 tsp ground pepper
- 1/2 tsp onion powder
- 1/4 tsp salt
Herb Butter
- 4 tbsp unsalted butter (at room temperature)
- 3 medium cloves garlic (minced)
- 1 tsp grated lemon zest
- 1 tsp lemon juice
- 1 tsp Worcestershire sauce (lower-sodium)
- 1/4 tsp crushed red pepper
- 1/8 tsp salt
- 1/16 cup basil (for finely chopped fresh tender herbs)
- 1/16 cup dill (for finely chopped fresh tender herbs)
- 1/16 cup chives (for finely chopped fresh tender herbs)
- 1/16 cup parsley (flat leaf (for finely chopped fresh tender herbs))

Directions
- Prepare Cabbage Steaks: Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with foil.
- Trim the stem off the cabbage. Slice the cabbage vertically into 4 (1-inch-thick) steaks. Place the steaks on the prepared baking sheet.
- Brush both sides of the cabbage steaks with 2 tablespoons olive oil. Sprinkle both sides evenly with ½ teaspoon pepper, ½ teaspoon onion powder, and ¼ teaspoon salt.
- Roast until the cabbage is tender and deeply browned at the edges, about 45 minutes, flipping the steaks carefully halfway through.
- Meanwhile, prepare Herb Butter: In a medium bowl, combine 4 tablespoons room-temperature butter, ¼ cup chopped fresh herbs, minced garlic, lemon zest, lemon juice, Worcestershire sauce, crushed red pepper, and ⅛ teaspoon salt.
- Beat with an electric mixer on medium speed until fully combined and fluffy, about 30 seconds to 1 minute. (Alternatively, mash together with a fork.)
- Remove the roasted cabbage steaks from the oven. Immediately spread the herb butter evenly over the hot steaks, allowing it to melt into the layers.
- Serve warm as a stunning vegetarian main or hearty side dish.
