Transform humble cabbage into the star of your table! These thick-cut cabbage steaks are roasted until tender and caramelized, then finished with a bright, herby compound butter that melts into every crevice. A simple, elegant, and budget-friendly side dish.

Directions

  1. Prepare Cabbage Steaks: Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with foil.
  2. Trim the stem off the cabbage. Slice the cabbage vertically into 4 (1-inch-thick) steaks. Place the steaks on the prepared baking sheet.
  3. Brush both sides of the cabbage steaks with 2 tablespoons olive oil. Sprinkle both sides evenly with ½ teaspoon pepper, ½ teaspoon onion powder, and ¼ teaspoon salt.
  4. Roast until the cabbage is tender and deeply browned at the edges, about 45 minutes, flipping the steaks carefully halfway through.
  5. Meanwhile, prepare Herb Butter: In a medium bowl, combine 4 tablespoons room-temperature butter, ¼ cup chopped fresh herbs, minced garlic, lemon zest, lemon juice, Worcestershire sauce, crushed red pepper, and ⅛ teaspoon salt.
  6. Beat with an electric mixer on medium speed until fully combined and fluffy, about 30 seconds to 1 minute. (Alternatively, mash together with a fork.)
  7. Remove the roasted cabbage steaks from the oven. Immediately spread the herb butter evenly over the hot steaks, allowing it to melt into the layers.
  8. Serve warm as a stunning vegetarian main or hearty side dish.
