Directions
- Cook the RICE according to the package directions. Transfer it to a large bowl and allow it to cool until it is comfortable to handle but still slightly warm and sticky.
- Cut the SPAM into small, evenly sized cubes.
- Coat a large skillet lightly with NONSTICK COOKING SPRAY and place it over medium heat. Add the Spam and cook for about 3 minutes, turning occasionally, until lightly browned on all sides.
- Add the SOY SAUCE, SUGAR, and BARBECUE SAUCE. Stir and cook for another 2–3 minutes, until the sauce becomes thick and glossy and coats the Spam. Transfer to a plate.
- Crack the EGGS into a bowl and whisk until evenly blended.
- Lightly coat the same skillet with additional cooking spray. Pour in the eggs and scramble over medium heat for about 1–2 minutes, stirring gently, until just set and still soft.
- Add the barbecue Spam, scrambled eggs, and FURIKAKE to the bowl of rice. Fold gently until the ingredients are distributed evenly without crushing the rice.
- With damp hands, divide the mixture into 6 equal portions. Press and shape each portion firmly into a compact round or slightly triangular onigiri.
- Wrap one SEAWEED STRIP around each rice ball. Drizzle with KEWPIE MAYONNAISE and garnish with chopped CHIVES.
- Serve immediately while the Spam and eggs are still warm.
