Directions

  1. Preheat and prep: Preheat your oven to 350°F (175°C). Line a loaf tin with parchment paper or grease it well.
  2. Mash the bananas: Using a stand mixer or by hand, mash the ripe bananas until smooth with minimal lumps.
  3. Combine wet ingredients: Add the melted butter and maple syrup to the mashed bananas and mix until well combined.
  4. Add remaining wet: Add the eggs, vanilla extract, and Greek yogurt. Mix again until everything is fully incorporated.
  5. Add dry ingredients: Remove the bowl from the stand mixer (if using). Add the flour, baking powder, baking soda, and cinnamon. Fold gently with a spatula until all dry bits are incorporated—be careful not to overmix.
  6. Bake: Pour the batter into the prepared loaf tin and smooth the top. Bake for 55–60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool and serve: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!
