Instructions
Brown the sausage: In a large stockpot or Dutch oven, heat 1 tbsp oil over medium-high. Add 12 oz smoked sausage (sliced into rounds) and cook 3-4 minutes until browned on both sides. Remove and set aside.
Sauté aromatics: In the same pot, add 1 chopped onion and 3 minced garlic cloves. Cook 3-4 minutes until softened. Add 2 tbsp butter and let it melt, scraping up any browned bits from the bottom.
Add broth and seasonings: Pour in 4 cups chicken broth. Add 1 tbsp Old Bay seasoning, 1 tsp paprika, ½ tsp cayenne (adjust for heat), 1 tsp black pepper, and 1 tsp salt. Stir well and bring to a boil.
Cook potatoes and corn: Add 1 lb small potatoes (halved if large) to the boiling broth. Cook for 10 minutes. Then add 2 ears of corn (cut into thirds) and cook for 5 more minutes.
Finish with cabbage and sausage: Add ½ head of green cabbage (cut into wedges) and return the browned sausage to the pot. Cover and simmer for 8-10 minutes until cabbage is tender but still has some bite. Serve in bowls with crusty bread.
