The thickest, creamiest high-protein chocolate mousse you’ll ever make! Blended with cottage cheese, chocolate protein powder, and peanut butter, this healthy dessert is topped with a fun Easter-themed “dirt and carrot” finish—crushed chocolate cookies and orange-dipped strawberries. Gluten-free and refined sugar-free!
Ingredients:
- 16 oz cottage cheese
- 1 tbsp cocoa powder
- 1/3 cup chocolate protein powder
- 1/4 cup creamy peanut butter (or almond butter or hazelnut butter for pure chocolate flavor)
- 3-4 tbsp Medjool date syrup (or maple syrup)
- 3 tbsp Simple Mills double chocolate crunchy cookies (or similar cookies or choice)
- 4 whole strawberries
- 1/3 cup organic white chocolate
- 1 pinch natural colorant orange
Ingredients are subject to availability at local stores. Unavailable items will be automatically substituted at best-effort.
Directions
- In a blender, combine cottage cheese, cocoa powder, chocolate protein powder, creamy peanut butter (or almond/hazelnut butter), and Medjool date syrup (or maple syrup). Blend until smooth, scraping the sides as needed.
- Pour the mousse mixture evenly into 4 individual cups or jars.
- Refrigerate for at least 1 hour for optimal taste and texture.
- Make the Easter toppings: Crush double chocolate crunchy cookies of your choice.
- Melt white chocolate and add a pinch of natural orange colorant. Dip strawberries into the melted chocolate and set on parchment paper to harden.
- Assemble the mousse cups by topping each with cookie crumbles (as the “dirt”) and an orange-dipped strawberry (as the “carrot”).
- Enjoy immediately or store covered in the fridge for up to 4-5 days without toppings.
