Buffalo Mozzarella Sticks

  1. Cut the mozzarella into thick sticks and place them on a parchment-lined tray. Freeze for at least 1–2 hours to help prevent the cheese from melting too quickly while frying.
  2. In one shallow bowl, add the flour. In a second bowl, whisk together the eggs and water. In a third bowl, combine the breadcrumbs, garlic powder, paprika, salt, and black pepper.
  3. Coat each mozzarella stick in the flour, then dip into the egg mixture, then coat in the breadcrumb mixture. Repeat the egg and breadcrumb steps one more time for a thicker, crispier coating.
  4. Place the breaded mozzarella sticks back into the freezer for about 15–20 minutes while the oil heats.
  5. Heat oil in a deep skillet or pot to 350°F. Fry the mozzarella sticks in batches for 2–3 minutes, or until golden brown and crispy. Avoid overcrowding the pan.
  6. Remove the mozzarella sticks and place them on a paper towel-lined plate.
  7. In a small bowl, whisk together the hot sauce, melted butter, and honey until combined. Drizzle or lightly toss the mozzarella sticks in the buffalo sauce.
  8. Serve immediately with ranch or blue cheese dressing and enjoy while warm and melty.
