Ingredients:
- 1 small flour tortilla
- 1 tbsp sunflower seed butter
- 2 tsp jelly (or fruit spread)
- 5-6 buttery round crackers
- 1/3 cup sliced cucumber
- 1/3 cup seedless grapes
- 1/2 cup chocolate pudding
Ingredients are subject to availability at local stores. Unavailable items will be automatically substituted at best-effort.
Directions
- Lay the flour tortilla flat and spread the sunflower seed butter evenly over the surface, leaving a small border around the edge.
- Spread a thin layer of jelly or fruit spread over the sunflower seed butter. Avoid overfilling so the roll-up stays together when sliced.
- Roll the tortilla snugly into a log, then slice it crosswise into several kid-sized SunButter & jelly roll-ups of roughly similar thickness.
- Arrange the roll-ups in the lunch container.
- Add the sliced cucumber and appropriately prepared grapes alongside the roll-ups.
- Spoon the chocolate pudding into a small leak-resistant container if it is not already individually packaged.
- Add the buttery round crackers to a dry area of the lunch container so they stay crisp.
- Seal the lunch and refrigerate until ready to pack. Keep chilled with an ice pack until lunchtime.
Lunch Box Tips
Keep the Filling Thin: Use a modest layer of sunflower seed butter and jelly so the tortilla rolls tightly and the filling does not squeeze out when sliced.
Make the Roll-Ups in the Morning: For the best tortilla texture, assemble and slice the roll-ups shortly before packing rather than storing the sliced pieces overnight.
Keep the Crackers Crisp: Pack the buttery crackers away from the cucumber, grapes, pudding, and other moist foods whenever possible.
For Younger Children: Prepare grapes appropriately for your child’s age and eating abilities rather than serving them whole.
School-Friendly Option: Sunflower seed butter can be a useful alternative in settings where peanuts or tree nuts are restricted, but always follow your child’s school or childcare food-allergy policy.
Pack It Safely: Refrigerate the roll-ups, cucumber, grapes, and pudding until it is time to leave, then use an ice pack to keep the lunch chilled until lunchtime.
