A classic Chinese comfort dish featuring melt-in-your-mouth pork belly braised in a sweet and savory sauce with star anise, ginger, and soy. Slow-cooked until tender and served over steamed rice with fresh green onions. Pure comfort in a bowl.
Ingredients:
- 2 lbs pork belly
- 1/3 cup water
- 50 g brown sugar (or rock)
- 3 slices ginger
- 3 cloves garlic
- 2 bay leaves
- 2 star anise
- 3 tbsp shaoxing rice wine
- 2 tbsp soy sauce
- 2 1/2 tbsp dark soy sauce
- 3 cups water
- green onions

Directions
- Cut pork belly into 1½-inch cubes.
- Boil the pork belly in water for 10 minutes to remove impurities. Strain and rinse.
- In a deep pan over medium heat, add water and rock sugar (or brown sugar). Cook until it melts and begins to caramelize.
- Add the boiled pork belly, ginger slices, and garlic cloves. Stir for 2 minutes.
- Add Shaoxing rice wine, soy sauce, dark soy sauce, star anise, and bay leaves. Then add water to braise the pork belly.
- Cover with a lid and cook over medium-low heat for 1½ hours, until the pork is extremely tender. Add more water if needed.
- Once the pork is tender, remove the lid, raise the heat to medium-high, and let the sauce thicken for 5-10 minutes until it coats the pork well.
- Serve over rice and top with chopped green onions.
