A classic Chinese comfort dish featuring melt-in-your-mouth pork belly braised in a sweet and savory sauce with star anise, ginger, and soy. Slow-cooked until tender and served over steamed rice with fresh green onions. Pure comfort in a bowl.

Directions

  1. Cut pork belly into 1½-inch cubes.
  2. Boil the pork belly in water for 10 minutes to remove impurities. Strain and rinse.
  3. In a deep pan over medium heat, add water and rock sugar (or brown sugar). Cook until it melts and begins to caramelize.
  4. Add the boiled pork belly, ginger slices, and garlic cloves. Stir for 2 minutes.
  5. Add Shaoxing rice wine, soy sauce, dark soy sauce, star anise, and bay leaves. Then add water to braise the pork belly.
  6. Cover with a lid and cook over medium-low heat for 1½ hours, until the pork is extremely tender. Add more water if needed.
  7. Once the pork is tender, remove the lid, raise the heat to medium-high, and let the sauce thicken for 5-10 minutes until it coats the pork well.
  8. Serve over rice and top with chopped green onions.
