These maple cinnamon sweet potato waffles combine naturally sweet sweet potatoes, warm spices, and protein-rich ingredients into a comforting breakfast that feels like a weekend treat while supporting healthy eating goals.
Ingredients:
- 3/4 cup sweet potatoes
- 1/2 cup Greek yogurt (or cottage cheese or other dairy-free yogurt alternative)
- 2 large eggs
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 1 cup all-purpose flour (or gluten-free rolled oats)
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground ginger
- 1 cup cottage cheese (for serving)
- 1 whole fruit (your choice, for servingg)

Directions
- Add the sweet potatoes, Greek yogurt, eggs, maple syrup, and vanilla extract to a blender.
