
Low-Carb Tuscan Chicken Bake
Ingredients:
- 2 cups broccoli florets
- 1 cup cherry tomatoes
- 1 cup spinach
- 2 chicken breasts
- 1 tbsp 100% avocado oil spray
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1/3 cup sun-dried tomatoes
- 3 cloves garlic (minced)
- 1 cup half & half (or heavy cream)
- 1/4 cup grated parmesan cheese
- 1/2 cup shredded mozzarella
Directions
- Preheat your oven to 400F.
- Add the broccoli, cherry tomatoes, spinach, and chicken breast to your casserole dish.
- Spray everything with avocado oil so the seasonings stick!
- Season with your onion powder, garlic powder, Italian seasoning, and salt & pepper!
- Add your sun-dried tomatoes, minced garlic, and half & half!
- Top with freshly grated parm & shreds mozzarella cheese and bake at 400F for about 30 minutes or until your chicken is fully cooked!
