Low-Carb Stuffed Chicken Breast with Tomato, Mozzarella, & Spinach

Directions

1. Preheat the Oven: Preheat your oven to 375°F (190°C).
2. Prepare the Chicken Breasts: Butterfly the chicken breasts by slicing through the middle horizontally, being careful not to cut all the way through. Open the chicken breasts like a book.
3. Stuff the Chicken: Layer the inside of each chicken breast with spinach leaves, 1-2 slices of tomato, and 1 slice of fresh mozzarella. Sprinkle the filling with dried oregano, salt, and pepper.
4. Secure with Toothpicks: Fold the chicken breasts closed and secure the edges with toothpicks to keep the stuffing inside while cooking.
5. Sear the Chicken: Heat olive oil in a large ovenproof skillet over medium heat. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
6. Bake the Chicken: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).
7. Serve: Remove the toothpicks before serving, and enjoy the stuffed chicken with a side of roasted vegetables or a fresh salad.
