Recipe: Chicken + Marinade: • Chicken tenders • 1 tsp onion powder • 1 tsp garlic powder • 1 tsp Morton’s Season-All • 1 tsp cayenne pepper • 1 tsp Kinder’s All Purpose • 1 tsp Tony’s seasoning • 1 packet Sazón • 1 tsp paprika • 1 tsp parsley • 1 cup buttermilk • 2 tbsp jalapeño juice Flour Coating: • All-purpose flour • Same 1 tsp seasonings as above Hot Honey Sauce: • ½ cup Frank’s Buffalo • ¼ cup honey • 1 tbsp hot sauce (adjust to taste) Pasta + Sauce: • 1 box penne pasta • 1 tbsp chicken bouillon powder (for boiling pasta) • 2 tbsp unsalted butter • Minced garlic • Chopped onion • 1 tbsp flour • 1½ cups heavy cream • 1 tsp of the same seasonings listed above • 4 oz mozzarella cheese • Extra 1 oz mozzarella for finishing ⸻ Instructions: 1. Season chicken with all spices listed for the marinade, pour in buttermilk and jalapeño juice, and mix well. Let marinate for 30 minutes. 2. Season flour with the same spices. Coat chicken in the flour, shaking off excess. 3. Heat oil to 350°F and fry chicken for 7–12 minutes or until golden brown. Set aside. 4. In a small pot, simmer Frank’s Buffalo, honey, and hot sauce until glossy, then toss the fried chicken in the sauce. 5. Boil penne pasta in water seasoned with chicken bouillon powder until tender, then drain. 6. In a pan, melt butter and sauté minced garlic and chopped onion until fragrant. Add flour and whisk for 30 seconds. 7. Slowly pour in heavy cream, add the same seasonings, and let it thicken. Stir in 4 oz mozzarella until smooth. 8. Add pasta into the sauce along with the additional 1 oz mozzarella and mix until creamy. 9. - 1 minced garlic
- 1 chopped onion
- 1 tbsp flour
- 1 1/2 cups heavy cream
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp Morton's season-all
- 1 tsp cayenne pepper
- 1 tsp cayenne pepper
- 1 tsp Kinder's all purpose
- 1 tsp Tony's seasoning
- 1 packet Sazu00f3n
- 1 tsp parsley
- 4 oz mozzarella cheese
- 1 oz mozzarella (for finishing)

Directions
- In a bowl, season the chicken tenders with onion powder, garlic powder, Morton’s Season-All, cayenne pepper, Kinder’s All Purpose, Tony’s seasoning, Sazón, paprika, and parsley. Pour in the buttermilk and jalapeño juice, and mix well. Let marinate for at least 30 minutes.
- Prepare the flour coating by mixing all-purpose flour with the same set of seasonings used in the marinade (1 tsp each).
- Coat the marinated chicken in the seasoned flour, shaking off any excess.
- Heat oil in a deep pot or fryer to 350°F (175°C). Fry the chicken for 7–12 minutes, or until golden brown and cooked through. Drain on a wire rack and set aside.
- For the hot honey sauce, combine Frank’s Buffalo sauce, honey, and hot sauce in a small pot. Simmer over low heat until the mixture becomes glossy.
- Toss the fried chicken in the hot honey sauce until fully coated. Set aside.
- Cook the penne pasta in a large pot of boiling water seasoned with chicken bouillon powder until al dente. Drain and set aside.
- In a large pan or pot, melt the unsalted butter over medium heat. Sauté the minced garlic and chopped onion until fragrant.
- Whisk in 1 tbsp of flour and cook for about 30 seconds to form a roux.
- Slowly pour in the heavy cream while whisking constantly. Add 1 tsp of the same seasoning blend used for the chicken. Let the sauce simmer and thicken.
- Turn off the heat and stir in 4 oz of mozzarella cheese until the sauce is smooth and creamy.
- Add the cooked pasta to the cheese sauce along with an extra 1 oz of mozzarella. Mix until the pasta is evenly coated and the cheese is melted.
- Plate the creamy pasta. Top with the hot honey chicken and drizzle any extra sauce from the pan over the top before serving.
