This crisp, colorful Asian chicken salad is packed with lean protein and fresh vegetables, making it an easy lunch or light dinner that’s both filling and refreshing. Tossed in a bright sesame-lime dressing with garlic, ginger, and a hint of chili, it’s perfect for meal prep while delivering big flavor in every bite.
Ingredients:
- 150 g chicken breast (or rotisserie chicken)
- 80 g cucumber
- 80 g peppers
- 80 g carrots
- 80 g cabbage
- fresh cilantro
For the Dressing
- 1 tbsp sesame oil
- 1 tbsp fish sauce
- 1 tbsp rice wine vinegar
- 2 limes (juiced)
- 5 g honey
- 1 tsp garlic
- 1 tsp ginger
- chili flakes

Directions
- Finely shred the cabbage and add it to a large mixing bowl.
- Remove the seeds from the cucumber, then chop it along with the bell pepper and carrots. Add everything to the bowl.
- Mix in the fresh cilantro and the cooked chicken.
- In a small bowl, whisk together the sesame oil, fish sauce, rice wine vinegar, lime juice, honey, garlic, ginger, and chili flakes.
- Pour the dressing over the salad and toss until everything is evenly coated.
- If desired, sprinkle with sesame seeds before serving.
