Instructions
Prep watermelon and cucumber: Cut 2 cups of watermelon into 1-inch cubes. Thinly slice ½ cucumber. For extra cooling, you can peel the cucumber or leave the skin on for added nutrients.
Add herbs and cheese: In a large bowl, combine watermelon and cucumber with ¼ cup fresh mint leaves (torn or chopped). If using, add 2 tbsp crumbled feta or cotija cheese for a salty contrast.
Make the lime-honey dressing: In a small bowl, whisk together juice of 1 lime (about 2 tbsp), 1 tsp honey (or agave), and a pinch of salt. The honey helps balance the acidity and enhances the watermelon’s sweetness.
Combine and serve: Drizzle dressing over the watermelon mixture. Gently toss to combine. Serve immediately or chill for 15 minutes for flavors to meld. Top with extra mint leaves for garnish.
