Crispy Rice Sushi Salad

This crispy rice sushi salad combines crunchy roasted rice, flaky tuna, creamy avocado, fresh vegetables, and a savory sesame dressing into one incredibly satisfying meal. It delivers all the flavors of a spicy sushi roll with simple pantry ingredients and is perfect for meal prep lunches.
Ingredients:
- 1 1/2 cups sushi rice (or jasmine rice (best to use day-old rice))
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp chili crunch (or chili oil, can omit if you don't have it)
For the Salad
- 1 large avocado (diced)
- 2 cups cucumber (diced)
- 1/3 cup sesame seeds
- .32 oz dried seaweed (crumbled)
- 1 cup cilantro (finely chopped)
- 1 medium carrot (shredded)
- 3 cans tuna (drained)
For the Dressing
- 1/4 cup toasted sesame oil (or regular sesame oil)
- 1/4 cup soy sauce
- 3 tbsp rice vinegar
- 1 tbsp sriracha
- 2 cloves garlic (minced or grated)
- 1 tbsp honey (or maple syrup)
- 1 tsp mustard
- 1 tsp ginger (grated)

Directions
- Preheat the oven to 425°F.
- Toss the cooked rice with the soy sauce, sesame oil, and chili crunch. Spread onto a parchment-lined baking sheet.
- Bake for 30–40 minutes, stirring halfway through, until the rice is crispy and golden.
- Whisk together the sesame oil, soy sauce, rice vinegar, sriracha, garlic, honey, mustard, and ginger until smooth.
- In a large bowl, lightly break apart the tuna. Add the avocado, cucumber, sesame seeds, seaweed, cilantro, and shredded carrot.
- Add the crispy rice, pour the dressing over the salad, and gently toss until evenly coated.
- Serve immediately while the rice is still crisp.
